PRAWN & TOMATO SPAGHETTINI

SERVES 4 PREP 20 MINS COOK 10 MINS

300g spaghettini
¹/ ³ cup drained semi-dried tomatoes
2 garlic cloves, crushed
½ tsp dried chilli flakes
2 tbsp red wine vinegar
2 tbsp olive oil 500g raw peeled prawns, deveined
4 roma tomatoes, chopped
½ cup chopped fresh curly parsley
grated parmesan, to serve

1 In a large saucepan of boiling, salted water, cook pasta following packet directions. Drain, reserving ²/ ³ cup of the cooking liquid. Return pasta to pan and cover to keep warm.

2 In a food processor, process semi-dried tomatoes, garlic, chilli and vinegar to a paste.

3 Heat 1 tbsp oil in a large non-stick frying pan over medium to high heat. Add prawns and cook, turning occasionally, about 5 mins or until just cooked. Remove from pan.

4 Add remaining oil and tomatoes to same pan. Cook, stirring, 2 mins. Return prawns to pan with pasta,
