    Dressings

    Homemade Salad Dressing

    1/3 cup cider vinegar

    1/3 cup sugar

    1/3 cup oil

    Mix sugar and vinegar until sugar dissolves.

    Stir in oil

    Refrigerate, and shake before using.

    French Dressing

    1 cup sugar

    2 teaspoons paprika

    1 teaspoon diced garlic

    ¾ cup ketchup

    ½ cup cider vinegar

    1 graded very fine onion

    1 cup vegetable oil

    2 teaspoon salt

    Mix in blender and keep in refrigerator

    Buttermilk Ranch Dressing

    1/4 cup black pepper

    1 and ½ cup parsley flakes

    ½ cup garlic salt

    2 tablespoon kosher salt

    ¼ granulated garlic

    ¾ granulated onion

    2 tablespoon dill weed

    2 cups mayonnaise

    2 cups buttermilk

    1 1/2 cups sour cream

    1 teaspoon of lemon juice

    1/4 cup black pepper

    1 and ½ cup parsley flakes

    ½ cup garlic salt

    Put all dry ingredients in a quart jar, seal tightly until ready to use.

    To Make Dressing

    Mix together 2 tbsp of mix with 2 cups each of mayonnaise and buttermilk, 1 ½ cups sour cream, and 1 tsp lemon juice.

    Make a smooth paste-like mixture that you can then transfer to the mixer.

    Set it on medium speed and beat abut 10-15 min.

    If you have a small mixer as I do, take about 5 min. times to save burning up the mixer. I average burning up one every year.

    Breakfast

    Homemade Pancake Syrup

    Heat 1 cup of water to boil.

    Turn the heat down and stir in 1 lb. of brown sugar.

    Continue to stir until the sugar has completely melted.

    Great when served hot, over sausage and pancakes.

    Scrambled Eggs

    Start with a little butter in the skillet. Don’t let it burn.

    Whip the number of eggs you want with a little butter.

    Add desired amt. of salt and black pepper.

    Pour in skillet.

    Stir regularly, but not constantly, until consistency is as you desire. Cheese can be added. Of course, a few chips of bacon in them is good.

    Served with a couple strips of bacon.

    Biscuits and Sausage Gravy

    Brown sausage in a large saucepan.

    Remove sausage to a plate.

    In a bowl put about 2 heaping tablespoons of flour, stir in ¼ teaspoon of salt, a teaspoon of black pepper. Mix it well.

    Stir in, slowly, enough milk to make a thin paste.

    Stir the paste mixture into the sausage grease slowly, stirring constantly, until well blended.

    Add about one quart of milk and stir constantly until it bubbles.

    It’s done. Add more milk if you wish thinner gravy, or less if you like it thicker.

    Pour over hot biscuits.

    Biscuits

    Have a pan in the oven with about ¼ cup of shortening, melting.

    In a bowl, put about 4 cups of flour, 2 tablespoons baking soda, teaspoon of salt, tablespoon of shortening, stir together and add enough flour to make a soft, not gooey, ball.

    Roll out about 1/2-inch-thick and use a biscuit cutter or a glass and cut out the biscuits.

    Do not forget and leave the shortening in the oven. (FIRE HAZARD)

    After you have cut out the biscuits, place one side in the oil, or grease, whatever you are using and flip it over. Do each biscuit like that. Remainder of dough, roll and do the same until dough is used up. Bake 450 for about 15 min or until golden brown.

    Do not forget them and let them burn as I have before.

    Tater Tot Casserole

    Perfect for breakfast

    1 lb. of ground beef

    ½ cup chopped onion

    teaspoon of crushed garlic

    10 oz. can of cream of mushroom soup

    10 oz can of cream of chicken soup

    a little Worcestershire sauce if desired

    just a bit of hot sauce

    2 cups of cheddar cheese shredded

    a lb bag of tater tots

    Brown the ground beef, chopping it up as it cooks. Drain.
