    Salad Tips

    The recipes in this book are for first course salads or side salads. Doubling recipes, and in some cases adding a protein, will make them main entrees. A first course or side salad equals a large handful of lettuce.

    Salad Assembly

    ● When the recipe calls for 4 cups of lettuce, it means loosely packed and rounded. You can eyeball this as well. A good handful per cup.

    ● Choose good quality ingredients. If you use bagged salad, pick through it to remove limp or wilted pieces.

    ● Wash all produce. Wash to remove dirt, critters (it happens), and pesticides. The best way to wash greens is to fill a large bowl with cold water. Add green and swish around, maybe soak them for a minute or two. Then lift out the greens. Rinse out the bowl, refill with cold water, and repeat the process with the greens. Repeat until no dirt is left in the bottom of the bowl.

    ● Dry thoroughly. The drier the greens, the crispier they will be
