    Doughnuts (Bavarian Krapfen)

    Ingredients :

    500gr wheat flour

    70gr sugar

    7gr salt

    80gr warm butter

    1 egg

    2 egg yolks

    1 tbsp rum

    3/4 cube yeast (about 30gr)

    ca 150ml lukewarm milk

    Preparation:

    1.

    Mix all ingredients and knead for 3 minutes on low speed and then 10 minutes on high speed until a nice soft consistency.

    2.

    Cover the dough with a cloth and let it rise for about 30 minutes in a warm place .

    3.

    Place the dough on a floured surface and weigh out about 12 pieces of dough, each weighing about 75 grams.

    4.

    Shape the dough loosely round.

    5.

    Place the dough balls on a floured tea towel or baking paper, cover with a 2nd towel and press the dough pieces down firmly so that they can

    rise evenly.

    6.

    Let rise again for 30-40 minutes and keep moistening the surface slightly so that it does not become firm

    7.

    In the meantime, heat the fat, ideally about 160 degrees

    8.

    After the 30-40 minutes, cover the doughnuts and let them form a skin.

    9.

    Put them into the hot fat and bake for 2-2,5 minutes on each side.

    10.

    Remove the doughnuts from the fat and place on a kitchen towel to soak up the fat.

    11.

    Let cool briefly and drizzle the doughnuts with jam of your choice

    and dust with powdered sugar

    Apple strudel

    Ingredients:

    For the dough:

    220 gr wheat flour

    1 pinch of salt

    80 ml lukewarm water

    1 egg

    1 tbsp cooking oil

    For the apple filling:

    1,20 kg apples

    80 gr sugar

    2 tbsp lemon juice

    1/2 tsp ground cinnamon

    2 tbsp rum

    50 gr breadcrumbs

    100 gr raisins

    50 gr butter

    and also:

    some powdered sugar for dusting

    To taste vanilla sauce

    Preparation:

    1.

    Put the flour in a mixing bowl.

    Add remaining ingredients and mix everything with the dough hook of the hand mixer briefly on the lowest, then on the highest speed until a smooth dough.

    2.

    Coat the dough ball with a little cooking oil and place it in a pot.
