    Lemon cake

    Ingredients

    225g unsalted butter, softened

    225g caster sugar

    4 eggs

    finely grated zest 1 lemon

    225g self-raising flour

    For the drizzle topping

    juice 1.5 lemons

    85g caster sugar

    Directions

    Take a deep bowl; whisk the eggs together with the sugar, followed by the slightly melted butter, lemon zest, and, finally, the flour. Stir thoroughly to combine everything. Tip the mix into the greased tin paper. Bake at 180C/fan 160C/gas 4 for 50 minutes until baked through.

    Meanwhile, make the sprinkle topping by mixing together the necessary ingredients. Once the cake is done, leave it to cool a little. Then tap in some places and sprinkle over the lemony sugar. Serve with a cup of tea, if you wish.

    Ultimate chocolate cake

    Ingredients

    200g good quality dark chocolate

    200g butter

    1 tablespoon instant coffee granules

    85g self-raising flour

    85g plain flour

    0.5 teaspoon bicarbonate of soda

    200g light muscovado sugar

    200g golden caster sugar

    25g cocoa powder

    3 medium eggs

    75ml buttermilk (5 tablespoon)
