BEEF AND PORK
Cumin & Onion Marinated Beef
Cooking time: 20 minutes + marinating
Servings: 1
Ingredients:
225g/8oz thick flank or hanger steak
7g/1.5 teaspoon gluten-free Worcestershire sauce
1 garlic clove, crushed
juice 0.5 lime
7ml/1.5 teaspoon red wine vinegar
5g/1 teaspoon cumin seed
5g/1 teaspoon chilli flakes
0.5 small onion, grated
7ml/1.5 teaspoon olive oil, plus extra for drizzling
Instructions:
Mix the Worcestershire sauce, garlic, lime juice, vinegar, spices, onion and olive oil in a small bowl.
Cut the steak into several pieces, and season the meat well on both sides. Then place the seasoned beef in a flat non-metallic dish or baking tray, cover it with the marinade and let it marinate for up to one day.
Bring to room temperature 1 hour before grilling.
Heat an outdoor grill or griddle pan on high temperature. Pat the meat dry and drizzle with a little more oil, then season. Grill each side 3-4 minutes.
Once cooked, let the beef rest under foil for 10 minutes, then slice and serve with the desired sauces.
Barbecued Fajita Steak
Cooking time: 13 minutes
Servings: 1
Ingredients:
225g/9oz beef steak, preferably ribeye
2 flour tortillas, plus all the side dishes, to serve
25g/1oz pot soured cream (optional)
For the marinade
1.5 limes, juiced
7ml/1.5 teaspoon olive oil
1 garlic clove, crushed
2.5g/0.5 teaspoon dried oregano
2.5g/0.5 teaspoon freshly ground black pepper
5g/1 teaspoon ground cumin
small bunch coriander, finely chopped
Instructions:
Mix all the marinade ingredients in a bowl. Lay the steaks in a dish, then pour the marinade on top. Turn the steaks all over in the mix. Allow standing for at least 1 hour; or cover and chill for up to 24 hrs.
Heat the barbecue. When it is hot, wipe any excess marinade from the steaks, then cook for 3 minutes on each side for medium-rare. Let the steak to rest for about 5 minutes, then cut into thick slices.
Warm-up the 2 flour tortillas on the barbecue. Spread them with mashed black beans, then pile slices of steak, some onions & peppers, pico de gallo, guacamole and some soured cream.
Steak With Barbecue Sauce
Cooking time: 25 minutes
Servings: 1
Ingredients:
75g/3oz lamb leg steak (or beef if you prefer)
4ml/0.25 tablespoon sunflower oil, plus a little extra
¼ onion, chopped
30g/1oz tomato ketchup
7.5g/1.5 teaspoon Worcestershire sauce
7.5g/1.5 teaspoon light muscovado sugar
7.5g/1.5 teaspoon red wine vinegar
Instructions:
Season the steak on both sides, brush them with oil.
