IN JAPANESE, TERIYAKI roughly translates as “shiny grilled” and describes a cooking style in which meats are marinated in a thin but potent mixture of soy sauce, sugar, and mirin (a sweet Japanese wine) or sometimes sake and then quickly grilled or broiled. The sugar and sweet wine reduce and caramelize to produce the dish’s signature luster and complex flavor.
