    Salad dressings have several variations but making them follows a basic simple formula. The basic vinaigrette needs just vinegar and oil then a sprinkle of salt and pepper. You get better taste when you use higher quality oil. Extra virgin olive oil is usually the go to oil for salad dressings but other oils such as vegetable oil, grapeseed oil, nut oils and canola work well also.  For vinegar, you have so many to choose from. The basic are wine vinegars and you can also use apple cider and rice vinegar. Balsamic and sherry vinegars lend bolder flavors to your dressings. You can use citrus juices (lemon, lime etc) when you don’t have vinegar at hand but it is better to use them as complements not entire substitutes.

    Salt and pepper are the basic seasonings you need for making dressings but you can raise the flavor bar by adding a variety of add-ins. Fresh or dried herbs like mint, cilantro, basil, dill, and thyme work aromatic wonders. Onion, shallots, scallions, garlic and ginger can be used fresh or dried as well.
