Amara Rochon lives on Maui since 1989. She was born and raised in Quebec, Canada. She traveled to India twice and has been in love with Indian food and Indian spices since then. It is her second cookbook. Saroj'ne Achari was born in Fiji where she learned traditional cooking from her family. She lives on Maui with her family since 2001. Cooking is very important to her. She knows the benefits of healthy meals and the strong health it rewards you with. She loves to share her food with her clients and friends.

About the Authors
Sarojni Achari was born in Ba, Fiji and is now a resident of Maui, Hawaii. She learned the art of cooking from her family. The recipes and cooking techniques which were passed down all the way from ancient India, reflect a thousand years of knowledge about eating for wellness.
Indian cooking is meant to support all the body’s organs in perfect harmony, providing strong health, the power to work hard and to keep a clear mind. All of this is done with a minimum of ingredients.
The way she looks at 40 can be the envy of many 20 years old. She radiates energy.
The complexity of Saroj meal flavors proves that. At every bite the taste changes and we feel energized and well nourished.

was born when I asked her to publish a cook book of her everyday eating along my own health oriented favorite Indian style recipes.
The gold color from the turmeric in the food reminds us of wellness, just like the sun on a beautiful midsummer day.
Cooking Indian style elevates your mood and provides a natural way to protect your health.
Our cookbook is low fat and dairy free. Also because Saroj does not eat beef or pork I kept that cookbook beef and pork free.
I integrated the health benefits of spices and ingredients because I believe that if we eat healthy as often as possible we will keep our body strong and it will protect our genes as well. Then we will not need to rely on so many pharmaceuticals and vitamins.
Remember that dry spices and herbs do get old and they can alter the taste of a meal.
I like to buy my Indian spices and dry herbs in bulk at the health store. Hawaiian Moons in Kihei and Mana in Paia have a good selection of bulk spices (great curry and turmeric powder) and herbs.
Also in Kihei town there is a popular Oriental store that sells a delicious Madras curry powder and turmeric in sealed packages. You can find that store behind Jack in the Box.

TURMERIC: One of the most loved spices and a natural wonder. Turmeric contains curcuminoids (which reduces the size and number of precancerous lesions in humans), which is unseen with any other antioxidants. Turmeric sooth ulcers, eases dyspepsia and digestion. It reduces bloating and improves intestinal flora. It is antibacterial. Turmeric is a potent anti-inflammatory to mucous membranes (throat, lungs, stomach and the intestines). It supports liver function and aid the body to protect itself against diabetes and skin problems.
Health Benefits of Spices Herbs and Oils
Recent research shows that it may prevent metastases from occurring in many forms of cancers. It is a natural pain killer and cox-2 inhibitor and has long been used in Chinese medicine for the treatment of depression.
Turmeric is widely used in India in the Ayurvedic medicinal system because it supports the stimulation of the body’s natural defenses.
Turmeric is also known for cleansing the chakras, which are the ethereal channels of the subtle body.
People from India and Fiji use turmeric when showering to heal their body when they are sick with measles, chicken pox, parasites and pain in the joints.
FENUGREEK: Fenugreek regulates blood sugar and glucose levels. It helps diabetes. It increases breast milk in mothers. It is now used in body building supplements because it builds muscles and help to lose fat. It is high in fiber. Fenugreek contains fenusides (testofen), which benefits hormonal support, as in enhancing libido in women and men. Fenugreek is used in all meal cooking in India because it so powerfully benefits digestion and enhances the health of the body.
Use only a few grains in cooking for the flavor is bitter. For best results the secret is to use a little in every day cooking.
CHILLIES: Chilies detoxify are antibiotics and painkillers. They are believed to fight and destroy cancer cells and to defend the body against heart attacks.
I buy dry red chili pepper in a sealed bag at the Oriental Store and I pulverize it to powder in a coffee grinder to avoid big specks in the food.
