Carole Noveck
Carole Noveck is on the Faculty of The Threshold Program at Lesley University in Cambridge, MA. She has a Master’s Degree in Counseling Services, and many years of experience working with young adults with learning challenges. She also has a solid history working as a food educator. She has taught many cooking classes, catered, demonstrated food products, and designed kitchens. She also has prepared international cuisine for 38 years with her “gourmet cooking club.” Teaching for more than twenty years, Carole originally taught classes to help prepare students to find and keep employment. For the past 6 years, she has also taught Food Lab, a popular class among the students. She was pleased that students seemed so enthusiastic about this class. She began to do some research into why this class captured their interest and energy and recognized that this course teaches so much more than only good nutrition and new recipes. She hopes that other educators will consider using this tool to gain insight into their students while offering them tools for health and well-being. Carole, living in Waban, MA, with her husband, and precious dog, and not too far from her adult children, considers herself fortunate to combine her passions, special education and food education, in this text.
