● 1 tablespoon curry powder (I use Maharajah style curry powder )

● 1 tablespoon kosher salt

● Juice of 1 lemon

● 1 ¼ cup chopped cilantro, divided

● 4 scallions , thinly sliced

● 2.5 pounds of lamb grazed Spareribs

● 2 teaspoons kosher salt

● 1 tablespoon curry powder (I use Maharajah style curry powder )

● 1 large yellow onion, coarsely chopped

● ½ pound ripe tomatoes

1) Mix the ribs with 2 teaspoons salt and curry powder 1 tablespoon. Use your hands to coat the ribs well.

2) Cover and refrigerate for at least four hours to one day.

5) Once burned ribs add chopped garlic to the pot off the heat empty. I take the pot off the heat so the garlic does not burn - they are adding a disgusting metallic taste and will ruin your curry.

6) Stir the garlic until fragrant (30 seconds) before adding the tomato puree and onion.

7) Place the pot back on burner over medium heat setting.

8) Add the curry powder, salt, 1 cup chopped cilantro, and lemon juice. Bring to a boil and add the lamb again. Mix to cover ribs with curry sauce.

9) Lock the lid of the pressure cooker and increase heat to high to bring to high pressure. Once high blood pressure is achieved, reduce heat to low to maintain high pressure for 20 minutes.

10) Let pressure release naturally (10-15 minutes). Taste for seasoning and add the scallions and ¼ cup chopped cilantro.
