SPICE MIXTURE
10ml (2t) each cumin and coriander seeds
5ml (1t) each smoked paprika and regular paprika
5ml (1t) each freshly ground pepper and sea salt
15ml (1T) brown sugar
BUTTER MIXTURE
125g soft butter finely grated zest of 1 lemon
2 red chillies, finely chopped (optional)
handful of parsley, finely chopped
5ml (1t) fresh or dried thyme
CHICKEN
2 garlic cloves, crushed
5ml (1t) sea salt
1 whole chicken handful of fresh thyme or rosemary (optional)
POTATOES
30ml (2T) olive oil
4-6 potatoes, quartered coarse sea salt
TO FINISH
1 red onion, sliced into rings fresh parsley
lemon wedges
