Living Gluten Free - Aaron T. Harper

    DEDICATION

    ––––––––

I dedicate this little precious book to those who want to live gluten free.

    ACKNOWLEDGMENTS

    ––––––––

Without your support, my life would not turn out this far. I thank my mom and may family who help me go through all this work and finished it.

    Introduction

    ––––––––

Periodically, we hear about a new health concern that is making headlines because of the vast number of individuals who have been discovered as being affected by it.  In recent years, these topics have included carbs, visceral or belly fat and type 1 and 2 diabetes (although these disease are nothing new, they have been much more widespread because of the dramatic rate of obesity).

But there is something else on the horizon that is just now gaining notoriety because of the significant number of individuals that it affects.  We're talking about gluten sensitivity.

Up until just a few short years ago, no one had never really heard of gluten sensitivity.  In most cases, the condition remains so cleverly shrouded that its symptoms were never properly connected together to pinpoint exactly what was going on for these people.  It was assumed that they were just suffering from one of a laundry list of common, age-old conditions.  But that wasn't the case.

We're not talking about simple abdominal pain after eating or your typical bout of diarrhea. It's much more than that.

Gluten sensitivity is not only very real, but in some cases, it could potentially even be deadly.

    2 What Is Gluten?

    ––––––––

Within the last decade, and more commonly within just the past few years, we have been inundated with information about gluten.  Everywhere you look you'll see gluten-free foods and warnings about how dangerous gluten can be for you if you harbor a sensitive to it.  But even with so much emphasis being placed on gluten, many still tend to ignore this subject.  Why?  It's not because they don't care about improving their health, but rather because they aren't aware that they could be the next potential victim of this very serious and very real crisis.

The problem is that people, by nature, like to ignore the obvious.  They feel that if they just don't focus on something health-related that it doesn't exist and it will go away on its own.  Unfortunately, when it comes to gluten sensitivity, nothing could be further from the truth.  If you are sensitive to gluten, it will never clear up on it's own: it will never improve on it's own: and it will certainly never, ever go away.  Once you have it, it is here to stay so you have to be willing to know how to properly deal with it or it will totally consume your entire life.  Period.

    What You're Dealing With

Gluten is a storage protein that is found in the mature seeds of several types of grains.  Because it is directly related to the seeds of the plants it is not found in the grasses of these plants.  This means that some grains such as oats, wheatgrass and barley grass do not contain gluten because
