Introduction:
Welcome to ‘Mighty Basil’ the first in a series of books highlighting the use of herbs in every day life. Volume I will examine how the herb is used in cooking and Volume II will focus on its use around the home.
For me, basil is the king of herbs. Its smell is reminiscent of summer and its inclusion in pasta or salads elevates any dish to something special. As soon as autumn starts to nip at its tips, I make huge batches of pesto and then freeze them in icetrays. Then, when it’s winter it transports me back to warmer days (Hint – sometimes the frozen garlic can be slightly bitter so I tend to add that separately).
This book is like a love letter to the herb and you will discover how versatile basil is. There are recipes for:

Welcome to chapter one. In this chapter we will be examining the culinary uses of basil and will find some inspiring recipes.
Italy: A Love Affair with Basil.
In the heart of Mediterranean cuisine, Italy's culinary landscape is infused with the vibrant flavours of basil. Here, basil takes centre stage in iconic dishes such as pesto Genovese, where fresh basil leaves are blended with pine nuts, Parmesan cheese, garlic, and olive oil to create a verdant sauce that enlivens pasta, sandwiches, and salads. In Caprese salad, basil leaves mingle with ripe tomatoes, fresh mozzarella, and a drizzle of balsamic glaze, epitomizing simplicity and elegance on the plate. Basil also finds its way into soups, stews, and risottos, infusing each dish with its signature aroma
