    1.  Lemon Basil Shortbread Cookies

    Ingredients:

    ●  1 cup unsalted butter, softened

    ●  1/2 cup granulated sugar

    ●  2 cups all-purpose flour

    ●  Zest of 1 lemon

    ●  2 tablespoons fresh basil, finely chopped

    ●  1/4 teaspoon salt

    ●  Extra granulated sugar for coating (optional)

    Instructions:

    1.  Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.

    2.  In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

    3.  Add the lemon zest and chopped basil to the creamed mixture, and mix until well combined.

    4.  Gradually add the flour and salt to the mixture, stirring until a dough forms. If the dough is too crumbly, you can add a tablespoon of milk to help bring it together.

    5.  On a lightly floured surface, roll out the dough to about 1/4 inch thickness.

    6.  Use cookie cutters to cut out desired shapes from the dough. Place the cut-out cookies onto the prepared baking sheet, leaving some space between each cookie.

    ●  1 cup pretzels, crushed

    ●  1/2 cup chocolate chips (optional, for topping)

    Instructions:

    1.  Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.

    2.  In a medium saucepan, melt the butter and chopped chocolate over low heat, stirring constantly until smooth. Remove from heat and let it cool slightly.

    3.  In a large mixing bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

    4.  Gradually pour the melted chocolate mixture into the sugar and egg mixture, stirring until smooth and well incorporated.

    5.  In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

    6.  Spread half of the brownie batter evenly into the prepared baking pan.

    7.  Drop spoonfuls of peanut butter over the brownie batter, then use a knife to gently swirl the peanut butter into the batter.

    8.  Sprinkle half of the crushed pretzels over the peanut butter layer.

    9.  Carefully spread the remaining brownie batter over the peanut butter and pretzel layers.

    10. Sprinkle the remaining crushed pretzels and chocolate chips (if using) evenly over the top.

    11. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

    12. Allow the brownies to cool completely in the pan before slicing and serving.
