S’MORES CHOCOLATE CHIP COOKIES
Makes 24 cookies
Reminiscent of a favorite campfire treat, these soft and chewy cookies earned Heather Alemu of My Sweet Precision first prize in a baking competition.
INGREDIENTS For Dough
2¼ all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
¾ cup brown sugar, packed
¼ cup granulated sugar
1 box vanilla instant pudding mix (3.4 ounces)
2 eggs, room temperature
1 teaspoon vanilla extract
2 cups chocolate chips
For Topping
½ cup chocolate chips
1 cup miniature marshmallows
2 sheets graham crackers, broken into pieces
INSTRUCTIONS
1. Sift together flour and baking soda in a medium bowl and then set aside.
2. In a large bowl, cream together butter, brown sugar and granulated sugar. Beat in instant pudding mix until blended. Stir in eggs and vanilla. Blend in the flour mixture. Finally, stir in chocolate chips.
Cover the dough and chill for 2 to 3 hours or overnight. Before baking, remove dough from the refrigerator and allow to warm at room temperature for 20 minutes.
