Preface
When I was approached about doing a cookbook, I thought, This sounds like something I can definitely do. After all, I work in the family pizzeria, and my entire life has revolved around authentic Italian recipes created mostly by my nonna and my father. So I got busy selecting which family recipes I wanted to share with you.
My nonna now lives in Sicily, but when she lived in America, she stayed with us often. When I walked in the door after work each day, she would jump up to greet me and put on her apron. It could be ten o’clock at night, and she would still be ready to cook.
"Salvatore ai fame? Pochettino di pasta?" she’d say. Sal, are you hungry? A little pasta?
Usually, I said no, but I never won that battle. Soon the aroma of garlic would fill the kitchen, and water would already be boiling on the stove for pasta. I knew back then that those times would be treasured memories. What I didn’t expect, though, was an entire education of Sicilian food and its history.
I’ve learned that the island of Sicily was invaded many times over hundreds of years, and that over time, a bit of each invasion has made its way into authentic Sicilian recipes. Most of the outside influence is from countries like Turkey and other Arab countries, but also from other Mediterranean countries like Greece—but the real secret to great Italian food is the ingredients.
Most Sicilian families have their own gardens. They grow everything. The climate is perfect for fruit trees, which grow fruit so delicious you could pick and eat them right from the tree. Most people grow olives, and when the time is right, they go to a facility that makes true virgin olive oil from the olives they have grown. In my nonna and nonno’s house, there was a huge barrel of olive oil in a closet that they used all year round. Grapes hung over their carport all summer—some of which made it to the table, but others went to the winery. They made for very strong wine. And, of course, there was no shortage of heart ready to be poured into any dish that may have needed it.
