    I would like to dedicate this book to my ancestors, whose diligence and love helped my family to survive.

    Introduction

    Health and fitness were not topics discussed much when I was growing up. The basics of good hygiene, going to the doctor for yearly checkups, routine dental visits, etc. were a part of our routine. Unfortunately, diet and exercise were not much of a concern from my past generations. Both of my parents grew up in poverty at some point in their lives. It was a struggle for their parents to put enough food on the table at times. This, of course, affected food choices and portion control. We realize that healthier food are more expensive and cannot always be afforded. Folks in generations past had to choose foods that were cheaper and would go a long way with multiple mouths to feed. I truly admire how our families were able to manage with the little that they had.

    When my parents got married, they also had financial struggles, but things improved in time. We were a middle-class family, with traditional family roles. My dad was a hard worker, who always provided us with all we needed. My stay-at-home mother was an excellent homemaker, who took pride in taking care of my older brother and me. One of the things that she enjoyed most was preparing delicious, lavish meals for her family. Her mom, Eula, was also a stay-at-home mother, who was born and raised in Alabama. She also prided herself in cooking large, delicious meals for her loved ones. It meant a lot to have more than enough coming from a background of going hungry at times.

    Grandma's southern cooking was second to none. My mother would tell us how her mom's cooking meant love and comfort for her and her two siblings. She said that was why cooking for her family was so important to her. My paternal grandmother, Mary, was also a great southern cook from Mississippi, who prepared wonderful, delicious meals for dad and his seven siblings. Dad would tell me how it was the high point of his day to see what Grandma had prepared for the family at supper time. I still remember my
