Here's a step-by-step description of how to make Okonomiyaki, the popular Japanese dish:
Ingredients:
cup all-purpose flour
cup dashi (Japanese stock) or water
½ cups shredded cabbage
green onions, finely chopped
4 slices of bacon or thinly sliced pork belly
small squid, cleaned and sliced (optional)
1/2 cup tempura scraps (tenkasu) or chopped cooked shrimp (optional)
1/4 cup grated nagaimo (yam)
large eggs
Vegetable oil for cooking
Okonomiyaki sauce (store-bought or homemade)
Mayonnaise
Aonori (dried seaweed flakes)
Katsuobushi (bonito flakes)
Instructions:
In a large mixing bowl, combine the flour, dashi (or water), grated nagaimo, and eggs. Whisk until the batter becomes smooth and well-combined.
Add the shredded cabbage, green onions, and any optional ingredients (such as sliced squid or tempura scraps) to the batter. Mix everything together until the cabbage is evenly coated with the batter.
Heat a griddle or a large non-stick frying pan over medium heat. Add a drizzle of vegetable oil and spread it around to coat the surface.
