INGREDIENTS

7 tblsps vegetable oil
1 red onion, peeled and finely chopped
4 cloves garlic, minced
2 tblsps minced lemongrass
2 tsps sesame oil
8 tblsps soy sauce
2 tblsps oyster sauce
4 tblsps sugar
1 cup water
2 tsps freshly ground black pepper
2 tblsps Chinese cooking wine or sake (optional)
750g white fish fillets
8cm piece ginger, peeled and thinly sliced into matchsticks
4 spring onions (shallots), rinsed, ends trimmed and chopped
Rice, to serve

TO GARNISH

Lime wedges
4 sprigs coriander, roughly chopped (optional)
1-2 bird’s-eye chillies, sliced

METHOD

1 Heat 3 tblsps of the vegetable oil in a saucepan over
