    From My Kitchen to Yours - Ms. Esther Samuel

    EASY TRAVEL CAKE- Perfect for High-tea too.

    Ingredients: 60gms maida

    125ml milk

    60 gms almond slivers (30gms in the cake & 30gm on top)

    100gms butter (at room temperature)

    200gms condensed milk

    70gms almond powder

    60gms mix fruit jam

    1tsp baking powder

    Method:   1) In a bowl, whisk butter and condensed milk till a little fluffy.

    2) Add the maida with the baking powder, gradually, and keep

    mixing in one direction only.

    3) Now add the almond powder, half of the almond slivers

    and jam.

    4) Mix well and pour into a greased cake tin.

    5) Spread the remaining half of the almond slivers on the

     poured mixture.

    6) Bake for 25 minutes at 180˚C, in a pre-heated oven.

    Note:  This cake will not rise much but it can be easily stored in the fridge for 15 days.
