This classic bake is really having a moment right now! We’ve supersized it, so you can share the love. serves 8-10 | prep 30 mins (+ cooling) | cooking 40 mins

250g butter, chopped, at room temperature
60g ( 1/3 cup) icing sugar mixture, plus extra, to dust
1 tsp vanilla extract
225g (1 1/2 cups) plain flour
70g ( 1/2 cup) custard powder

buttercream filling

125g butter, chopped, at room temperature
210g (1 1/3 cups) icing sugar mixture
1 tsp finely grated lemon rind

1 Preheat oven to 150°C/130°C fan forced.

2 Use electric beaters to beat the butter and icing sugar in a bowl until pale and creamy.
