Ms. Mamie Omar Njie is a Gambian-American pioneer entrepreneur with 35 years of experience in the culinary and catering service sector. In September 1976, after graduating from Chesterfield College of Technical Engineering with a Bachelor of Science in Food Service for the Hotel Industry, Ms. Njie opened her first retail restaurant outlet Mamies Takeaway at Banjuls McCarthy Square. From this strategic location she catered to the residents, working class and tourists of the Greater Banjul region. In 1977, building on a solid reputation of great food, superb service and professionalism, she opened two new restaurants near The Gambia Commercial and Development Bank headquarters in Banjul and its branch in the Bakau business district.

    FOREWORD

    The Author Mamie Omar Njie AKA Mamie’s-Take-Away has accumulated over 40 years of multifaucet work experience as a caterer in formal institutions in The Gambia, The United Kingdom, and the United States Of America. In addition to this experience she also worked in the informal sector as an entrepreneur in both The Gambia and The USA. She held top managerial and supervisory positions in large such as the Government, private institutions, hospitals, nursing and retirement homes, including restaurants. The author was also featured on Delight Cooking TV Program, through Montgomery Cable TV as part of promotion on African cooking recipes, hosted by Ruth Devoir. In addition she was also featured by Krista Mahr (Kmahr@ACH.com) as the cover story/Life on Anchorage Daily News, Alaska on July 23,2004, while conducting a large catering function for both The Gambian and Alaskan community in Anchorage In 1975, Mamie successfully completed a 3 year full time training program at Chesterfield

    College of Technology in the United Kingdom. The program included catering for the hotel industry, bakery production, bread making, flour confectionary, cake decorations and designs. Related areas of the program focused on food preparation for institutions and family, including food sanitation and handling. Upon completion of the program in The UK, Mamie returned home to The Gambia and taught Home Economics at the Crab Island Secondary school. She resigned as a teacher in 1976 to peruse her own catering enterprise called Mamie’s-Take-Away. As an Entrepreneur, Mamie had a catering base with a social club at the Kanifing Industrial Estates. The base was also supplying fast food to 5 retail Kiosk established by Mamie, at Jul-Brew Factory,Kanifing, Bakau, Old Fountain and The Gambia Commercial and Development Bank in Banjul. This established production of fast food catering was the first in The Gambia, pioneered and operated by Mamie. While the fast food was still in operation, in 1976 Mamie also took up employment by the Medical Research Council
