    CHAPTER 1

    BREAKFAST

    01. Breakfast Scotch Eggs

    Preparation time: 10 minutes

    Cooking time: 12 minutes

    Servings: 4

    Ingredients:

    1 pound sausage, ground

    4 eggs

    1 tablespoon olive oil

    2 cups water

    Directions:

    Put 1 cup water in your electric cooker, add the steamer basket and put the eggs inside.

    Cover, cook on High for 6 minutes, transfer eggs to a cutting board, cool them down and peel.

    Divide sausage mix into 4 pieces, flatten each, add an egg in the center of each and wrap well.

    Put the oil in your electric cooker and set it on Sauté mode.

    Add scotch eggs, brown them on all sides and transfer to a plate.

    Add 1 cup water to the pot, add the steamer basket, add scotch eggs, cover and cook on High for 6 minutes.

    Divide eggs between plates and serve.

    02. Banana and Cinnamon French Toast

    Preparation Time: 50 minutes

    Servings: 6

    Ingredients

    1 ½ tsp Cinnamon

    ¼ tsp Vanilla Extract

    6 Bread Slices, cubed

    4 Bananas, sliced

    2 tbsp Brown Sugar

    1 tbsp White Sugar

    ½ cup Milk

    ¼ cup Pecans, chopped

    3 Eggs

    ¼ cup Cream Cheese, softened

    2 tbsp cold and sliced Butter

    ¾ cup Water

    Directions

    Grease a baking dish and arrange half of the bread cubes. Top with half of the banana slices. Sprinkle with half of the brown sugar. Spread cream cheese over the bananas.

    Arrange the rest of the bread cubes and banana slices on top. Sprinkle with brown sugar and top with pecans. Top with butter slices. In a bowl, whisk together eggs, white sugar, milk, cinnamon, and vanilla.

    Pour the mixture into the baking dish. Place the trivet inside the cooker and pour the water. Lower the baking dish onto the trivet. Cook on MEAT/STEW for 30 minutes at High. Do a quick pressure release.

    03. Easy-to-make Carrot & Pecan Muffins
