    Chapter 1: Instant Pot Beef Recipes For Two

    These delicious instant pot beef recipes for two are easy to follow and will leave you with a hearty, delicious meal. From short ribs to Mongolian beef, we've got you covered.

    Honey Garlic Beef Short Ribs

    Ingredients:

    1/2 pound (4-6) beef short ribs

    Salt and pepper

    1/2 onion, diced

    3 cloves garlic, minced

    1 cup beef broth

    1/4 cup honey

    1/4 cup soy sauce

    1 tablespoon rice vinegar

    1 teaspoon grated ginger

    1 teaspoon sesame oil

    Steamed rice, for serving

    Chopped green onions, for garnish

    Directions:

    1. Season the beef short ribs with salt and pepper. Add the onion, garlic, beef broth, honey, soy sauce, rice vinegar, ginger and sesame oil to the Instant Pot.

    2. Close the lid of the Instant Pot and set the valve to Sealing. Press the Manual button and set the timer for 60 minutes.

    3. When the timer beeps, quick-release the pressure by carefully turning the valve to Venting.

    4. Remove the lid and using tongs, transfer the beef short ribs to a plate.

    5. Skim the fat from the surface of the sauce and press the Sauté button. Bring the sauce to a boil and cook until slightly thickened, about 5 minutes.

    6. Return the beef short ribs to the Instant Pot and spoon some of the sauce over them.

    7. Serve over steamed rice and garnish with chopped green onions, if desired. Enjoy!

    Mongolian Beef

    Ingredients:

    1/2 pound flank steak, trimmed and cut into thin strips

    salt and black pepper to taste

    1/4 cup all-purpose flour

    2 tablespoons vegetable oil

    1/2 onion, diced

    3 cloves garlic, minced

    1/2 cup beef broth

    1/4 cup soy sauce

    1/4 cup brown sugar

    1 tablespoon rice vinegar

    1 teaspoon grated ginger

    steamed rice, for serving

    chopped green onions, for garnish

    Directions:

    1. Season the beef with salt and black pepper. Place the flour in a shallow dish. Dredge the beef in the flour to coat and set
