    Chapter 1: Understanding the Fundamentals Of The Pot!

    I am pretty sure that by now you must be salivating to try out the amazing Indian Instant Pot recipes in this book and impress your family members and neighbors alike, but I would like you to hold on for just a second!

    Now of course if you are an experience chef, then you already know everything there is to know about the pot. However! If you are a new and rising chef who is just experiencing the pot for the first time, then I would highly encourage you to take some time off your busy schedule and go through this chapter in order to properly understand and appreciate the majesty of your new device.

    I do believe that this should help my book reach a wider range of audience (both amateur and expert culinary enthusiasts).

    That being said, let’s start off with the very basic question first.

    1.  What is this so called Instant Pot?

    The undeniable truth here is the fact that the culinary industry has seen a massive leap in technological advancements over the past few years.

    New devices are coming up every now and then, and they are all designed with only one thing in mind

    Make cooking as much accessible, healthy and easy as possible

    Following that motto, we were blessed with devices such as the Sous Vide Cooker, Slow Cooker (CrockPot), Air Fryer and much more.

    The Instant Pot itself isn’t necessary a stranger here as well, In fact the Instant Pot might just be the device that will be remembered as the one that revolutionized the art of pressure cooking.

    So, in short, the Instant Pot is a cooking appliance that utilizes the power of pressure to cook meals within a very short period of time (when compared to other more traditional cooking methods).

    As you can see, to obtain a better understanding of the pot , it is quintessential that we understand what Pressure Cooking means.

    In Layman’s terms, pressure cooking is the process of cooking a meal inside a sealed up vessel by trapping or generating steam inside the device and making use of it.

    The science behind this amazing process lies in the fact that the boiling temperature of water actually tends to go up as the pressure inside the sealed vessel rises.

    The Instant Pot uses this science and works its magic.

    As more and more steam is generated inside the pot, the pressure increase, which allows the water to reach very high temperature without actually boiling up, which greatly allows to minimize the amount of time taken to prepare meals while making the process much more efficient as well.

    That being said, let’s have a look at the individual components of the Instant Pot.

    2.  Having a gander at the Anatomy of your pot

    As you can see from the image above, the Instant Pot is comprised of different layers of individual components that working in a synchronous harmony to ensure that everything works accordingly.

    It should be noted though that electric pressure cookers from different companies might vary a bit, as they always try to add something special in order to make their device Unique. However, the following are pretty staple when it comes to an Electric Pressure Cooker.

    A cooker will have an inner pot which will also be known as a cooking pot

    There will be an electric heating element which acts as the heat source

    There will be sensors that will electronically control the pressure and temperature

    Amongst all of the Electric Pressure Cookers though, the Instant Pot is undoubtedly one of the most advanced and unique and stands on a league of its own.

    The temperature highly accurate temperature and pressure sensors of the device allows the pot to maintain and regulate optimal internal temperature all throughout the cooking process.

    This process is also known as the Closed Loop Control System and it is designed the take advantage o the versatility of the device and make sure that the cooking with an Instant Pot is as easy and as possible.

    Thanks to that mechanism, asides from the preparatory steps, recipes involving an Instant Pot ultimately lead down to the user adding all of the ingredients to pot (as per recipe) and setting the timer and pressure.

    And that’s it! The pot will take care of the rest by itself.

    Instant Pot’s even come equipped with a good number of pre-programmed settings that make the process cooking that much more accessible.

    The accuracy of these various pre-programmed settings are very high as the settings were chosen after assimilating the data from a huge number of chefs all around the world.

    3.  Having a look at the components of the Pot

    If you have gone through the sections above, then by now you should have a clear understanding of the fundamentals of the Instant Pot!

    Now, let’s get into a bit more detail on the different core components of the pot and have a look at how they work.

    The Cooking Pot

    The Cooking Pot of the device is the actual place where the cooking takes place, so it is crucial that we have a look at this one first.

    These pots are usually made of either Aluminum or Stainless Steels.

    Premium electric pressure cookers such as the Instant Pot, generally tend to go for Stainless Steel pots as they are much more durable and easier to clean.

    Some pots even go as far as to add a copper cladding on the bottom that allows it to distribute heat more efficiently, which gives for even cooking.

    The Locking Mechanism

    The Instant Pots are equipped with a nifty Sealing Ring or Gasket allows the device to create an Air Tight chamber inside the pot once the lid is closed.

    Once the upper lid has been brought down and comes in contact with the inner pot, the gasket helps to create an internal vacuum that makes helps to pot to seamless cook the meals you love.

    The Safety Mechanism

    Since we are dealing with lots of pressure here, it is very natural for manufacturers to ensure that their device is safe to use.

    Being perhaps the safest electric pressure cooker to date, the Instant Pot has a good number of safety features that ensure that the users are kept safe from any hazardous scenario.

    It should be noted that throughout the ages, the design of these safety mechanism have evolved slightly as to make things safer.

    Let’s discuss about the first generation safety feature first.

    Safety Pins: Older models of Pressure cookers had these Float Valves that acted as safety pins. Whenever the pressure of the pot would rise, the valves would push themselves up lock itself like a hatch, which would cause the lock to stay firmly locked up.

    But these old models actually had a pretty big drawback. They had the tendency of being damaged due to prolonged exposure to high pressure.

    The solution to these valves were the updated mechanism that came in the form of Push Down Pressure Release System.

    Push down Pressure Release: Newer Electric Programmable Pressure Cookers such as the Instant Pot tend to implement these valves, which came with their personal protection mechanism known as the Anti Block Shield, which protected them from any kind of wear or tear.

    This technique allows the valves to stay intact as long as the specified pressure level has not been reached.

    Once the pressure level exceeds normal levels though, the seal position of the valve slowly relaxes itself and allows any excess pressure to release in order to prevent excess buildup.

    These new valves are also controlled by the accompanying electronic sensors (pressure and temperature) that allows the cookers to hold a certain amount of pressure for a certain period of time.

    4.  Having a Look At The Different Buttons Of The Pot

    Due to the multitude of options present in the control panel of the pot, it is normal for an individual to get overwhelmed at first sight.
