I'm by profession a Vocal Coach, Musical Producer and Songwriter and while studying music in Switzerland I took some courses in French and International Cuisine solely as a personal interest. My mother was known to be an outstanding cook herself among family and friends and as a young child growing up in my mainland (Puerto Rico) I would always find it exciting to sit in the kitchen counter when she was cooking absorbing her culinary flair which came so natural to her. The art of cooking has prevailed on both my mother and father's side of the family. My cousin, Vivien Ramos-Umpierre published a book in the 90's in Puerto Rico called "Simplemente Gourmet" (Simply Gourmet); and another cousin, Denisse Oller who presently from New York has a commercial blog called "A La Cocina con Denisse" (At the Kitchen with Denisse) and is a Nutritional Advisor. Being totally involved for the last 25 years in the world of music, I really didn't have much time, if any to cook with the passion and time required until due to an expected health condition I was basically forced to change my eating habits drastically and "voila" my culinary -creative juices started to flow. I managed to put together in this book a balance of deliciously sophisticated but healthy meals and weight maintenance all in one.

    First and foremost to my Lord Jesus: Thank you Lord for the food we eat, for the abundance of nutrients you have created and provided for us that we derive from Mother Nature. The perfection of your creation is visible and palpable even in the perfect balance contained in every morsel that we eat. I am blessed and thankful to You for helping me heal my body and inspiring me to write this book as a result of this so that I can in turn help so many others.

    To my dear husband, family and friends: Enjoy the natural foods that are good for you so you can stay healthy. There’s so much to choose from that has real natural-nutritional value as opposed to others which slowly but surely deteriorate your system. And then again you can always go off-track a little over the weekends so you can enjoy as I say the best of both worlds.

    These recipes are fast and easy to do, and contain very low caloric levels but are scrumptiously good and exciting to eat.
