    What Is an Incremental Approach?

    You've heard the old adage Inch by inch it's a cinch!?

    An incremental approach to learning is simply learning something a little at a time until it is mastered. As a homeschooling mom I taught my kids this way for decades. No, really decades – 1989 to 2012!

    You learn one aspect of the subject and then you move on to the next level while continuing to practice each new bit of information. By the time you are finished with each level you've got it! I have tried to use that method here. You certainly don't have to do the recipes in order but you'll find you have more understanding if you do. I want you to learn to bake bread but it is just as important to have fun doing it.

    Introduction to Bread

    Bread has been a part of the human diet for thousands of years (and that’s an understatement). At first it was unleavened porridge baked on hot rocks. At some point someone didn’t clean up the cave after breakfast and by lunch the left over porridge was airy and bubbly, infused with wild yeast. From there it was a hop, skip, and a jump to the Egyptians developing yeast commercially. At this point in human history we enjoy all kinds of breads made with all kinds of flours from all kinds of grains. There has never been more flexibility, choice, and adventure in bread making than there is right now.

    There are a lot of reasons for wanting to bake your own bread.

    Homemade bread has better flavor.

    Homemade bread is healthier because there are no preservatives.

    Homemade bread is satisfying and fun to make.

    Plus it makes your house smell better than anything else. Walking in the kitchen to the scent of warm bread is heavenly. Cutting a still warm piece and slathering it with a generous amount of butter is even better. Yum!

    There are no real tricks or special techniques to bread making. For the most part you don’t need special equipment. A stand mixer that can handle bread dough is nice to have but people kneaded bread by hand for thousands of years. It just takes time, practice, and strong arm muscles! I find that hand kneading dough is relaxing and helps me quiet my mind when I am under a lot of stress – it’s very therapeutic.

    This book is for everyone from beginners to those souls with lots of experience. If you are a beginner then I suggest you bake through the book chapter by chapter. Each chapter is built upon the foundation of the previous chapter. You can skip around but you may not be as successful since you may miss an important technique or suggestion.

    Buy a spiral notebook and keep notes about each loaf of bread you bake. Date it, make note of the temperature, the weather (Sunny? Overcast? Humid?), and even the brands of ingredients you use. Make notes about the dough, your observations, and how it all came out. Finding a solution to a problem will be much easier if you can review the process. You’ll be surprised how much
