Jen Selinsky
Jen Selinsky was born in Pittsburgh, PA. In 2003, she earned her bachelor's degree in English from Clarion University of Pennsylvania. In 2004, she earned her master's degree in library science from the same school. Jen has worked as a professional librarian for over twelve years. She has published more than 170 books, most of which contain poetry. Her work can be found on the following sites: Lulu, Amazon, iTunes, Kobo, Barnes & Noble/Nook, Smashwords, and Pen It! Introduction
Breakfast, lunch, and dinner are great; there’s no doubt about that. Oftentimes, nothing feels better than fueling your body, regardless of the time of day. But, sometimes, a person can feel that there’s something missing. That’s where dessert comes in!
Dessert may be regarded as many things: after dinner rewards, meal complimenters, and pure decadence. All of these things are right, especially since some may look forward to dessert more than the actual meal. Remember the last time you attended a holiday family gathering? It seemed like the dinner to dessert ratio highly favored the latter of the two. Desserts are delicious! (Please forgive the alliteration.) Why do you think there are so many bake sales? It’s because sweet treats are what people seem to want the most.
In my book, Delightful Desserts, I am including drink and dessert recipes which I have acquired over the years. I have even made up one or two of these recipes and/or added my own little twists to some of the others.
So, for all of you who have purchased my book, thank you, and enjoy. I promise that these treats will be something that you and your loved ones can savor and delight in.

Drinks
Whether you are hosting a party, meeting with friends for the evening, or having a small gathering with loved ones, be sure to include these drinks to add to the life of the party.
HIGH-FIBER KALE-STRAWBERRY SMOOTHIE
Prep time: 5 minutes
Yield: 2 servings
Ingredients
1 large orange, peeled and separated
2 kale leaves, rinsed and stems removed
2 cups water
2 tablespoons chia seeds
1 cup frozen strawberries
Directions
Pour 1 cup water into blender. Add orange, kale, and strawberries. Pour remaining 1 cup water over ingredients. Blend until mostly smooth, adding more water if necessary. Smoothie will retain some texture due to the fiber.
THE POINSETTIA
Ingredients
1 ounce Liqueur
3.5 ounces of sparkling wine
Directions
Mix together Liquer and sparkling wine. If desired, add three pomegranate seeds into the champagne glass for garnish.
CANDY CANE COCOA
This is a simple drink recipe which I make for Travis every winter; it is especially good around Christmastime.
Ingredients
1 mug heated water (or milk)
1 package cocoa mix
One candy cane
Whipped cream (optional)
Directions
Heat water in microwave for 2-3 minutes on high. Open cocoa, pour in contents. Unwrap candy cane, stir thoroughly until powder is mixed and candy cane melts into beverage. Cool. Add whip cream to give the drink extra flavor.
NOT SO SILENT PUNCH
Ingredients
Bottle of pomegranate juice
½ 1 750 milliliter bottle of bourbon
1 bottle of Champagne
Directions
Thoroughly mix together pomegranate juice, bourbon, and Champagne and serve.
WASSAIL
My mother-in-law provided me with this recipe for wassail. I was curious about the word wassail
ever since I heard it sung in the Victorian Christmas carol, Here We Come A-Wassailing,
and I was surprised to learn that it was a drink! Shortly after Travis and I were married, the family started holding progressive dinners on Christmas Eve. The first stop is our house, where we serve appetizers and delicious, warm wassail.
Yield: about 24 servings
Ingredients
1 gallon apple cider
2 quarts cranberry juice (½ gallon)
1 tablespoon whole allspice
2 oranges
2 cups rum (optional)
2 sticks cinnamon
Cloves (to stud oranges
Directions
Stud cloves around both oranges. In a two-gallon pot, combine and mix
ingredients and heat gently for about two hours. (Croc pots also work for this.) Serve warm.
