I have always been a baker. If you open up the bottom cupboard in my kitchen you will find stacks of baking recipe books all dog-eared and covered in flour. Over the years, however, I’ve been hard pressed to find something new to add to my baking repertoire. I’ve tried flans, pies, cakes, European baking techniques, foreign ingredients, and...well, just about everything else. The one thing that I hadn’t tried baking was Amish treats. In fact, if I’m honest, I’d never even heard of Amish baking until last year.
I happened upon Amish baking when a friend of mine brought over Amish friendship bread. I’d heard of friendship bread
before, but I’d never realized that its roots lay in the Amish community. One taste of the delicious bread that my friend brought over and I was intrigued. I needed to know more about the Amish style of baking and what other treats I had been missing out on. More than that, I needed to know what it was that made Amish baking different from the other baking methods I had tried before.
It wasn’t long before I had clicked through every recipe website that I had bookmarked on my computer, bought every recipe book I could find online, and ordered far too many new ingredients to try out. Then I spent months in the kitchen baking. At first I started out just making the recipes in the books I bought and found online, but then I started tweaking things and adding in my own little touches here and there. Soon enough I had a legal pad filled with my own version of traditional Amish recipes!
