Smoker Recipes - Erica Shaw
Introduction
Chances are, if you like to grill and have invested some of our income on the best grill you can find, you are interested in the smoking aspect of cooking outside. This is a process where your favorite meat is cooked in a thick, flavorful cloud of a particular type of smoldering material, usually wood. You can cold smoke it for flavor enhancement, hot smoke to cook the taste in, or combine smoking the meat with roasting or baking.
As you get into the finer details of smoking meat, you’ll discover an incredible variety of options and choices to give you many different flavors as a result. Hickory and Mesquite woods are known for their boldness, while Apple and Cherry will give you a lighter flavor. You can also use charcoal and other heating elements to create the smoke you desire. All around the world, people are using culture-specific methods for heating.
You don’t have to restrict yourself to smoking only meat products. Some have smoked dried leaves over cedar or pine fires that create a delicious beverage. There are also recipes that help you smoke fruits and vegetables, like prunes and pickles. Popular meats include fish, beef, pork, poultry (like turkey and chicken) and even tofu.
Cold smoking is one type of smoking that can be used. It is similar to marinating your meat before you cook them. After the steak, chicken or fish you are cold smoking has the amount of flavor you desire, you will steam, bake or grill it. You don’t want to eat it raw.
There are several different types of cookers, as well. You have a choice between upright drum smokers, offset smokers and propane smokers. Do some research into what’s available before just picking up a big grill with a smoker attached. You may want specific features that can only be purchased by going to the right places. Grills and smokers are sold everywhere, even smaller department and grocery
