    Synopsis

    Introduction

    An up and coming aspect of the Food and Beverage Business in Singapore is to provide food for picnics which are defined as having a meal and/or activities outdoors, away from the air-conditioned eatery.

    Features of the Picnic Food Business

    Using the mnemonic PACNIC we have the features of this business:

    Packing the food in safe, hygienic way and removing the fuss of putting together all the elements of a picnic. E.g. getting the drinks, the mats, the shades and selecting the place to have the picnic.

    Aspirational aspects of the picnic as a social event is currently (2016) the norm among individuals, families and corporate trainers.

    Correct food for the time, the occasion and the event.

    Another aspect is the regulation that from 15th February 2012 all food caterers are required:

    1.To label, all food served in packed meals and buffets with the time it was ready to serve and the latest time by which the food has to be consumed. The time limit is four (4) hours.

    2.Food that is delivered to consumers must be kept at between 50°C and 60°C.

    3.The following label is required:

    New Way of Accepting the OUTDOORS. The picnic is the direct result of the efforts of the schools and universities in encouraging the pupils in sports and games.

    Also it is a reflection of the community’s efforts in developing recreational parks in the housing estates and the preservation of valuable green spaces in the nature reserves, with large pleasant places for the use of families with public amenities like water and public lighting, car parks, vending machines and toilets and garbage disposal.

    Three types of spaces are popular:

    Traditional: like Fort Canning Park

    Changi Beach

    Bukit Timah Nature reserve

    Historical sites: like Labrador

    Sembawang Park

    Katong Park

    Niche parks: like Botanic Gardens

    There is no better way to understand the current players than to look at their menus which offer insights into:

    •Their ideas of what they have tested on customers and hence what customers will want to buy for their picnic

    •What types of food are robust enough to be able to withstand some time before being consumed in the tropical heat and humidity
