VEGETABLE-BARLEY SOUP
In 2-quart saucepan, heat margarine until hot. Add chopped vegetables and mushrooms; cook over medium heat, stirring occasionally, until cabbage begins to wilt, about 10 minutes. Add remaining ingredients and bring to a boil. Reduce heat, cover, and let simmer for 30 minutes, stirring occasionally. Serves 4.
POLISH SAUSAGE SOUP
Combine all ingredients in a slow cooker; stir. Cover. Cook on high 2 hours and then low 6-8 hours. Serve with rye bread. Serves 8.
SAUERKRAUT SOUP
Heat the olive oil and butter in a large pot. Sauté the onion and garlic until they are golden. Add the rest of the ingredients and let simmer for at least one hour. If the soup is too thick, add more water. Serves 6.
CABBAGE SOUP
Heat the oil and butter in a large pot. Sauté onion and garlic until they are limp. Add cabbage and cook for 5 minutes. Stir to keep from burning. Add stock and soy sauce. Bring to a boil. Add rice and salt. Lower heat and simmer for 30 minutes. Serve with grated cheese. Serves
