    Basenji (Africa)

    The modern Basenji is from central Africa, but at some point its ancestor arrived there from eastern Asia. It is possibly the most ancient dog breed, as the common ancestor it shares with all other existing dogs lived longer ago than the common ancestor of any two other living dogs. Dogs resembling basenjis can be seen on stelae in the tombs of Egyptian pharaohs, sitting at the feet of their masters, looking just as they do today. Classified as sighthounds, basenjis were assistants to the hunt, chasing wild game into nets for their masters while producing an unusual yodel-like sound (barroo), earning it the nickname Barkless Dog. The 1954 novel Good-bye, My Lady, by James H. Street, is about a basenji. The book was made into a movie of the same name in 1956.

    BARKLESS DOGS

    8 beef hotdogs, grilled

    Lemon relish (recipe below)

    1 tsp olive oil

    1 ½ lbs onions, halved, thinly sliced

    Salt & pepper

    ½ cup water

    1 to 1½ Tbsp harissa sauce or other chili paste (such as sambal oelek)

    ¾ cup (or more) hummus

    8 grilled hot dog buns or 8x4-inch lavash sheets (Middle Eastern flat bread)

    Heat oil in heavy large skillet over medium heat. Add onions; sprinkle with salt and pepper. Cover; cook until onions are golden, stirring often, about 25 minutes. Add water and 1 Tbsp harissa. Simmer until water is absorbed, 4 to 5 minutes. Add more harissa, if desired.

    Spread hummus on buns or crosswise in strip on each lavash sheet. Top each with grilled hot dog, then onions and relish. Roll up lavash, if using, and serve.

    Lemon Relish

    2 lemons, thinly sliced with peel, seeded

    1 cup fresh lemon juice

    2 ½ Tbsp coarse sea salt

    ¼ cup finely chopped fresh cilantro

    ¼ cup finely chopped fresh mint

    ¼ cup extra-virgin olive oil

    4 garlic cloves, finely chopped

    Bring first 3 ingredients to boil in heavy large skillet over medium heat. Cover and simmer until lemons are tender, about 12 minutes. Uncover; simmer until liquid thickens to syrup, about 8 minutes. Transfer syrup to bowl and cool. Chop lemon slices; return to bowl. Mix in herbs, oil, and garlic.

    RELISHES, ETC.

    MY LADY’S WINGS

    2 ½ lbs wings, separated at joint, tips removed

    1 Tbsp coriander seeds, crushed

    ¼ tsp cumin seeds, crushed

    ¼ tsp cinnamon

    ½ Tbsp kosher salt

    1 Tbsp extra-virgin olive oil

    3 Tbsp Sriracha chili sauce

    3 Tbsp unsalted butter, melted

    2 Tbsp chopped cilantro

    Finely grated zest and juice of 1 small lime

    In a large bowl, toss the wings with the coriander and cumin seeds, cinnamon, kosher salt and olive oil. Cover and refrigerate for at least 4 hours or overnight. Preheat the oven to 375°F. Spread the wings on a large rimmed baking sheet and roast for about 90 minutes, until crispy and golden. Wash out the bowl. Add the Sriracha, butter, cilantro, lime zest and juice.

    Add the wings to the sauce and toss well. Transfer the wings to a platter. Serve hot.

    Greyhound (Egypt)

    The Greyhound is a breed of sighthound that has been primarily bred for tracking game and racing. At maximum acceleration, a greyhound reaches a full speed of 43 mph within 98 feet. The only other animal that can accelerate faster over a short distance is the cheetah. Greyhounds are quiet, gentle, and loyal to owners and are therefore considered to make wonderful pets. The breed's origin is reputed to be connected to Ancient Egypt, where depictions of sighthound-types like greyhounds have been found on tombs at Beni Hassan c. 2000 BC. However, DNA analysis reported in 2004 suggests that the Greyhound is not closely related to these breeds, but is a closer relative to herding dogs of Europe. Whatever. The Greyhound Bus Lines bus company’s logo is a racing greyhound. In Australia, racing greyhounds are commonly known dish lickers. TV’s The Simpsons have a greyhound named Santa's Little Helper.

    SANTA’S LITTLE HELPER DOGS

    Beef Hotdogs, grilled

    2 15-oz cans fava beans

    6 cloves garlic, or to taste

    1 tsp salt, or to taste

    1 Tbsp fresh lemon juice

    ¼ cup olive oil

    1½ Tbsp parsley, minced

    Radishes, chopped

    Hard-boiled eggs, chopped

    Chopped scallions

    Mini pita bread, grilled

    Press the garlic cloves through a garlic press into a medium bowl. Mash the garlic and salt together. Add the lemon juice, olive oil, and parsley to the garlic mixture and combine thoroughly. Drain the beans well, rinse, and put beans into a large pot over low heat. Add garlic mixture and stir with a wooden spoon to combine thoroughly. Place grilled hotdogs in pitas and spoon the beans over. Top with any combination of radishes, hard-boiled eggs, or scallions if desired.

    DISH LICKING WINGS

    2 lbs wings, separated at joint, tips discarded

    ½ cup olive oil

    2 Tbsp ground cumin

    1 Tbsp ground coriander

    1 onion, grated

    3 cloves garlic, finely minced

    1 tsp cayenne pepper

    Salt and freshly ground pepper to taste

    Lemony Hot Sauce (recipe below)

    Place the wings in a plastic zip top bag. Combine the ingredients for the marinade in a bowl and pour over the chicken. Cover and marinate in the refrigerator for at least 6 hours or overnight.

    Bring the meat to room temperature before cooking. While the meat is warming to room temp., preheat grill. Remove the meat from the marinade, reserving the marinade. Grill until cooked through, basting with reserved marinade while cooking. Toss with Lemony Hot Sauce and serve.

    1 tsp + 2 Tbsp of butter

    2 garlic cloves, minced

    ¼ cup white wine

    ½ tsp Worcestershire

    ½ tsp dried mustard

    ½ lemon, juiced
