Back in 2016, neighbor Desmond cooked a brisket and, while the flavor was good (actually great), it was tough as hell. Ray gives his take on if it could have been the meat that was bad given how RIGHT everything else was with the finished product. We also tease you with how to not get rubbery chicken skin on the BBQ pits…hint…HIGHER HEAT!!!  Just my $0.02, Ray has always been a great guest on this show…as evidenced by his appearance last week talking about his recent turkey tour through Illinois.
