Talking you back to 9/6/2016 – Last week the Best Moments show featured Ray Lampe and I had asked him about if you could just get a tough brisket at purchase and, no matter how good of a cook you were, you were just going to end up with a tough brisket? Well…IN THE SAME SHOW, and it was referenced at the front of the Ray segment…Dave Bouska from Butcher BBQ was also a guest and I asked him the very same question…and I will tell you this, outside of the answer on the brisket…the story he tells about “killing cows”  both as a professional and as a youth, and then the story about “Cows smelling blood and death in the air”  will blow your mind…I remember having that discussion with Dave 6 years ago, and hearing it again as I was posting it into the queue…maybe one of the all-time segments ever on this show…because I think there is a disconnect for a lot of people still…the meat you are eating is coming from animals that were killed…I know you understand that from a high level…but SEEING IT and DOING IT are much different…and everyone should see that so they know the WHOLE process…I think that would certainly help bridge that disconnect…might encourage some folks to not eat as much meat too!
