Brief history of Dutch cuisine
a culinary journey through time
Dutch cuisine, often undervalued, has a fascinating history that reflects the culture and idiosyncrasies of the country. From the frugality of the Middle Ages to the opulence of the Golden Age, through colonial influence and the two World Wars, Dutch gastronomy has evolved over the centuries, creating a unique culinary identity.
The humble origins:
In the Middle Ages, Dutch cuisine was simple and practical, based on basic ingredients such as fish, potatoes, vegetables and bread. Frugality was a virtue, and recipes focused on making the most of available resources. An example from this era is stamppot, a hearty mashed potato with vegetables that is still enjoyed in Dutch homes today.

The challenges of the 20th century:
The two World Wars meant a period of shortages and rationing for the Netherlands. The population had to resort to creativity to feed their families with limited resources. From this era, dishes such as kapsalon were born, a mixture of meat, fried potatoes and vegetables that became
