From the time we published our first cookbook in 1996, and probably from the time we opened the doors of the first CPK in 1985, we’ve known that a family cookbook was in our future. Our customers have always included families; that was our hope from the start. And, some of our toughest critics—and greatest inspirations—have been the kids. It was completely logical, then, to write a cookbook that would serve the whole family, from sophisticated, well-traveled adults, to teens going off to college, to the little ones, whose first solid food may well have been pizza.
Our goal with this book is threefold. First, we want to make our favorite—and your favorite—CPK specialties accessible to the whole family at home. We love to cook with our families. We may be in the restaurant business, but our grandkids are not. So, we’ve taken care to make sure that all of the recipes in this book can be executed by anyone, regardless of age or culinary skill. Sure, there are some tasks that should be carried out by adults. That’s why it’s a family cookbook!
Second, but just as important, we want to inspire the whole family to create their own pizzas, panini, salads, and desserts. All of our pizzas came about after a good deal of experimentation. That’s really the name of the game. Take a risk. Try new combinations. Use our crusts and techniques and make the toppings your own. There’s no right or wrong! And, when you come up with something you really love, be sure to let us know. As we already said, you inspire us, too!
Third, we believe that a family should cook and eat together. We already know that people love to congregate in the kitchen. Whether it’s because of the enticing smells or the anticipation of a great meal, that’s where people like to be. Preparing CPK dishes has the added appeal of allowing all of the participants to be creative. This isn’t work, it’s fun!
Over the years, tastes have changed, diets have come and gone, but one thing remains constant: people love our food. And some of our customers have literally grown up with us! Many of our customers started out with a Traditional Cheese Pizza or a bowl of Curly Mac & Cheese. After a while, they may have graduated to the Thai Chicken Pizza. Now, they’re off to college and wondering how they can make a Chipotle Chicken Pizza or a Grilled Chicken Pesto Panini in their first apartment. Some are
