    Wow, your legs are like sticks! This was a refrain I heard often in my youth. I’ve always been on the thin side. Growing up, adults would tell me, I used to look like you. You might as well eat whatever you want now because when you get older, you won’t be thin anymore." I took their advice and basically ate whatever I wanted. I hated vegetables, and only ate them because my mom cooked them and coaxed me into eating them each day.

    In high school, I was on the track team, and I started working out to sculpt my body—more for vanity than for health reasons. Other than my relationship with God, working out, and my mom’s attempts to persuade me to eat healthy foods, my other routines were not healthy. I was a moody kid who came home and fell asleep in front of the TV. I was often fatigued because I was a chronic procrastinator who stayed up late every night to maintain good grades.

    In college, my diet consisted of processed foods and artificial sweeteners. I ate anything that was cheap, microwavable, or convenient. I was still thin with no visible health problems. (Although, looking back, I now know that my diet definitely affected my well-being, especially my emotional health.) In nursing school, a friend who loved healthy foods told me that she always saw me eating food out of a package. I remember thinking, What else is there to eat? It’s easy to grab a Pop-Tart and run out the door. I don’t know what else to pack.

    When I started working in the pharmaceutical industry, I would eat four frozen, salty, highly processed microwavable burgers for lunch in one sitting. I thought, Hey, I’m still thin. I can eat whatever I want and be healthy.

    When I was older and started to have recurring health issues, I changed my diet and was delighted to learn that God’s healthy foods and natural remedies—God’s provision for his people—were effective at healing the body. As I continued working as a nurse in the clinical research industry, I became reluctantly aware that our culture’s views about food, health treatments, and the body are often not formulated by the wisest principles. This realization may lead someone to ask, Who can I trust when it comes to my health? or Who has the right answers for my health?

    About a year ago, someone asked me what I love about nursing. At first, I told her that I didn’t love nursing. Unfortunately, sometimes my lofty dream of helping people feels crushed underneath a crapload of unhelpful medical dogma, bureaucracy, censorship, and corruption. That’s the worn out, jaded, good people don’t win in this world side of me talking. But as I reflected on her question, the other side of me—the wide-eyed, hopeful, Jesus has already won the battle side—realized that there are at least two things that I appreciate about nursing: (1) I value how nursing can
