INTRODUCTION
The tradition of Chinese cuisine
Chinese cuisine is perhaps the oldest cuisine in the world: traces of it can be found even before the invention of writing. On the other hand, China is very vast and its population very large, which is also why it has developed into many regional sub-variants. There are many foods that characterise it and that have gone down in history all over the world thanks to the spread of Chinese restaurants: think of the typical dumplings, rice noodles or almond chicken. The variety of foods and flavours one encounters in this extraordinary country are many. It should be emphasised that, just as Chinese cuisine has spread around the world, the cuisine of the whole world has spread to China: in many large Chinese metropolises, all the world's cuisines can now be found, and numerous starred chefs have gone on to open a restaurant in China, thanks to the growing wealth of the population and the large number of people.
China has a history of over four thousand years and the Chinese people have created a colourful culture, of which Chinese cuisine is an indispensable part. Most foreign travellers to China are deeply impressed by its cuisine. Indeed, Chinese cuisine emphasises the integrity of colour, fragrance and taste in its dishes. Chinese cooks try to make dishes beautiful by coordinating their colours. Some dishes are simple, while others can be very vibrant. A Chinese food table looks very colourful and attractive.
Fragrance, perfume, is very important. Chefs use special ingredients to make food fragrant. But it is the taste that is the most outstanding feature of Chinese food. Various methods are used to make Chinese food delicious, which are very satisfying to the tongue.
Ingredients
A wide variety of ingredients allows chefs to express all their creativity. These include various grains, vegetables and meat from different animals (pork, cow, sheep, rabbit, dog, horse and donkey) as well as many spices.
The Chinese also use poultry, eggs and milk. Poultry includes chicken, duck, goose, turkey, pigeon, quail and pheasant. Seafood and freshwater fish are also used in Chinese cuisine.
