    Introduction

If you are like me, you too have flirted with this sweet temptress. You have felt that magnetic attraction to her delicious aromas and the taste of her. From my earliest recollection, she has formed the mainstay of my childhood, teens, and my adult life which followed. She was relentless in her pursuit of me. I could not resist her charms and her dazzling colors. She came dressed to kill, with beautiful wrappings and alluring voluptuousness. She was a shapeshifter arriving in various guises. Believe me, I had no clue that I was slowly allowing myself to be hypnotized and captured by her charms.

Who is this delicious temptress with her saccharine charms? It is none other than Saccharum Officinarum, which we commonly know as sugarcane, from which table sugar is derived. It is unbelievable how the products of this plant have completely taken over the preparation of various types of sweet and savory foods. Whereas our ancestors depended on honey, dates, and other plants, which are easily assimilated by the body, cane sugar comes with its own set of challenges and temptations.

Globalization has improved technologies, communication, media, trade, and transport links, so it does not matter where you are in the world, we are all accessing the same products and subjected to the same lifestyle changes. In addition to this, urbanization has isolated us from the source of our whole foods, rendering us completely dependent on quick access to packaged foods from our local supermarkets. We have inadvertently surrendered all control over a greater portion of what we eat. We have to trust the fruit and vegetables that are displayed in the supermarket have been grown without insecticides and pesticides. We have little control if they are genetically modified or grown organically. I know some of you will berate me and say that you can tell from stickers on your food that they are organic, but it is easy to put a sticker on a fruit or vegetable. You really don't know unless you are going to a farm and purchasing it firsthand.

I grew up in the Mediterranean and from as little as a young baby, sugar was offered in the form of breast milk, baby milk formula, and snacks. I am sure that my experience growing up is mimicked by billions of people the world over. According to Little Bundle (2020), more than one-third of breast milk is a form of sugar called lactose derived from the carbohydrates that the breastfeeding mother imbibes. The Evening Standard published an article by Braddick (2020) espousing that 8.7g out of every 3.4 ounces (100ml) of the baby formula consists of sucrose which is the sugar made from sugarcane. Can you imagine the impact this would have had on my body chemistry? I was basically being programmed to love sugar before I could speak or crawl. This goes for all of you, too.

When I was a toddler, I was given cookies, sweets, chocolates, baked goods, chips, and an array of delicious foods that tantalized my taste buds. It was like a chorus of angels singing in my mouth. Those foods were really heavenly foods to me. It was the start of my pattern of craving sugar and then feeling low in energy, requiring another snack to give me that same feeling. Some of us avoid the feeling of an energy ‘downer’ that a lack of sugar brings, so we just keep topping off the craving before we have the chance to feel low.

Many of the habits we form as young children are carried into adulthood. Your parents and their
