Ingredients.
2 Eggs (Separated)
1 1/2 Cups Milk.
1/2 Cup Butter (Melted).
2 Cups Flour (Almond, Coconut, Quinoa, Chickpea, Etc.)
2 TSP Baking Powder.
1/2 TSP Salt.
1 TBSP Honey.
1 Cup Fresh Blueberries.
Method.
In a small mixing bowl, beat the egg whites until stiff, set aside.
In another bowl, beat the egg yolks, add milk and melted butter.
Sift all dry ingredients together, add to the egg yolk mixture and mix until combined.
Add in the honey and half the fresh blueberries and mix lightly.
Gently fold in the beaten egg whites and cook in a hot waffle iron.
Avocado & Bacon Scrambled Eggs.
Ingredients.
6 Large Eggs.
1/2 Cup Whole Milk.
2 TBSP Butter.
1/2 TSP Salt.
1/4 TSP Black Pepper.
1 Medium Peeled & Chopped Avocado.
4 Bacon Strips (Cooked and crumbled).
Method.
In a bowl, beat eggs, milk, salt & pepper until combined.
Stir in avocado and crumbled bacon.
In a skillet over medium heat, melt butter, add egg mixture and stir gently until eggs are cooked and set, serve immediately.
Baked Spinach & Egg Bell Pepper.
Ingredients.
4 Bell Peppers (Any Color).
16oz Spinach (Chopped, Frozen).
4 Large Eggs.
Salt & Pepper to Taste.
Method.
Preheat oven to 400 degrees.
Cut off the top of each bell pepper and remove seeds and put into an oven proof dish and bake for 15 minutes.
Defrost and squeeze moisture out of frozen spinach.
Remove bell peppers from oven and stuff spinach into bell peppers.
