I’m a member of American Culinary Federation. I enjoy cooking for people and helping with tips on cooking. The favorite things I like to cook are Soul food, Italian and Mexican, but I enjoy trying new thing. Baking I enjoy too. My favorite pass time is cooking with family and friends. CHEESY EGG BENEDICTS

Make it
English muffins
½ cup water 2 Tbsp water 105-115 degrees
¼ cup milk scalded 1 Tbsp yeast
1 tsp sugar 2 cups flour sifted
½ tsp salt 1½ Tbsp butter softened
Combine first 4 ingredients in mixing bowl. Mix warm water and yeast together let set for 5 minutes. Then mix the two together then slowly add 1 cup of flour. Cover bowl with a towel and let rise until it falls back down. Next beat in butter then knead in the remaining flour. Pour dough out on table that’s sprinkled with cornmeal. Using hands press dough down to ½ inch. Cut muffins out using 3 inch greased ring. Set them on lightly greased cookie sheet pan. Let rise to double in size. Pick muffins up with flat spatula and cook on medium-medium high heat in skillet or griddle. Cook each side until lightly browned. Cool on rack split muffins after cooling.
4 English muffins 8 eggs
1 8-oz Velveeta 1 small can slice black olives
½ cup milk 1 Tbsp paprika
8 slices Canadian bacon
Cut cheese up into small pieces. Heat milk in small sauce pan and add cheese cook on medium low heat for 4-6 minutes. Stir while melting cheese this will avoid it from scoring. Leave on a simmer. In 4 quart pot fill halfway up with water and add 1 tbsp of vinegar and 1 tsp of salt. Bring to a slow boil crack eggs one at a time into pot. Cook eggs to your desired doneness. While eggs are cooking cut muffins in half and toast in the toaster, and heat ham in skillet and cook for 1½ minutes on each side. Put muffin on a plate. Place ham on muffin then egg and top with cheese sauce. Finish with sliced black olives and sprinkle with paprika. For Original Benedict replace cheese with hollandaise sauce.
You can use Smoked Salmon with original recipe.
Fake it
4 English muffins from bakery 8 eggs
1 jar cheese sauce 1 small can sliced olives
8 slices Canadian bacon 1 Tbsp paprika
Heat oven to 400 degrees. Use non stick muffin pans and crack one egg in each muffin hole. If you have a microwave muffin pan you can cook them in the microwave. Cook eggs to your desired doneness. While eggs are cooking cut muffins in half and toast in the toaster. Heat ham in microwave for 1 minute. And place on English muffin. Next remove eggs from muffin pan and place eggs on ham. Heat cheese sauce in microwave for 3 minutes. Top English muffin with cheese and top with sliced black olives and sprinkle with paprika. Check gourmet store for package hollandaise.
BISCUIT SANDWICHES

Use biscuit mix recipe.
8 eggs
8 slices Swiss cheese
Sausages
1 lbs ground pork shoulder 1 tsp savory
1 lbs ground pork belly 1 tsp fennel
1½ lbs ground chuck 1 tsp garlic
1½ Tbsp salt 1 tsp thyme
1 Tbsp sage 1 tsp marjoram
1 Tbsp black pepper
Combine all ingredients together in mixing bowl mix well. Get a 2 oz ice cream scoop to divide mix evenly. Scoop all patties use what you need and freeze the remaining patties. Cook sausages patties well done. While cooking sausage bake off biscuits and cut in half. You can fry the eggs over medium heat or whip eggs in a bowl and cook in large size skillet. Cook eggs like you would an omelet, pour egg in skillet and scramble eggs. Just before eggs are completely cooked spread eggs over skillet and finish cooking in one piece. If you can flip the egg, or turn with a spatula. Slide on cutting board and cut into eight pieces. Place eggs on bottom piece of biscuits then cheese, next sausage and top with other piece of biscuit.
Fake it
1 pkg big biscuits (8 pkg)
8 sausage patties (pre-cooked)
8 eggs
8 slices Swiss cheese
Cook off biscuits and set aside. Heat sausages up in microwave as instructed on box. Crack eggs and put in microwave muffin pan. (If desired scramble, whipped eggs before putting in muffin pan, if desire more texture halfway through cooking stir egg up and finish cooking.) Cut biscuit in half and place egg on biscuit, then cheese and sausage.
This can be made with Bacon or Ham also.
MEATY BREAKFAST BURRITO

Make it
6 eggs
¼ cup bacon diced cooked
¼ cup sausage cooked
¼ cup ham diced
¼ cup peppers and onions
½ cup diced potatoes, cooked
1 cup shredded cheddar cheese
4 12" flour tortillas (you can make fresh tortillas see recipe)
½ cup chunky salsa
2 Tbsp oil
Heat skillet with oil add bacon and sausage. Heat for 2 minutes then add vegetables and ham until hot. For potatoes left over baked potato, diced up. If no baked potatoes dice a potato and cook before other ingredients. Remove from skillet and scramble eggs and fold in the meat mix. Warm tortillas for 30 seconds in microwave or large skillet. Divide eggs evenly in tortillas and top with salsa and cheese and roll up.
Sausage Burrito Eliminate all other meats and increase sausage to 1 cup.
Bacon Burrito Eliminate all other meats and increase bacon to 1 cup.
Ham Burrito Eliminate all other meats and increase ham to 1 cup.
Fake it
6 eggs
3 cups of breakfast starter mix
4 Tbsp oil
4 12" flour tortillas
½ cup chunky salsa
1 cup cheddar cheese
Heat breakfast mix with 2 tbsp of oil in large skillet. Remove from skillet add 2 tbsp of oil and cook egg to desire doneness. Fold breakfast mix back into eggs. Divide evenly on tortillas then add cheese and salsa and roll up.
For a single meat burrito. Buy the breakfast starter with only the meat you desire.
EGG SCRAMBLE

Make it
1 cup vegetable oil
2 potatoes diced
½ cup bacon
½ cup sausage
½ cup ham diced
¼ Cup red and green bell peppers diced
¼ Cup onions diced
¼ Cup black olives sliced
8 pieces bacon
8 eggs
2 Cups cheddar cheese shredded
Salt and pepper to taste
Heat 12" skillet with oil then add potatoes. Cook potatoes for 5 minutes then set aside. Remove oil from skillet and add bacon cook until brown remove from skillet, and drain grease. Next cook sausage break sausage up while cooking. Next add vegetables and other meat to skillet. Add 2 tbsp of oil when everything is hot add eggs. Cook to desired doneness of eggs. Place eggs in 4 baking dishes top with cheese and place under broil to melt cheese.
Fake it
In your grocery freezer you can find breakfast mix. Heat mix in large skillet, add 8 eggs cook to desire doneness. Place in baking dish and top with cheese melt under broil.
FRENCH TOAST

French bread
1 cup water
1 Tbsp yeast
1/8 cup sugar
1 Tbsp shortening
2 tsp salt
2 ½ cups flour
Mix ½ cup water and yeast together set aside for 5 minutes. Mix remaining water and sugar, salt, and shortening in mixing bowl blend for 3 minutes. Add yeast mix then flour and knead for 10 minutes. Shape and put on cookie sheet pan let proof to double in size. Gentle brush bread with egg wash and bake for 10 minutes on 450 degrees with a cup of water in pie pan. Then remove water and reduce heat to 425 degrees for 25-35 minutes. Check bread by tapping on bread it should sound hollow bread is done. Let cool and slice.
6 eggs
2 cups milk
1 cup heavy cream
1 Tbsp cinnamon
1 tsp vanilla
½ cup powdered sugar
Mix eggs, milks, cinnamon and vanilla in a large bowl. Heat flat griddle or large skillet. Dip sliced bread in egg and milk mix quickly place on griddle or in skillet and brown on both sides. Place on plate and dust with powder sugar.
Cinnamon Raisin French Toast use raisin bread recipe and slice ½ inch slices.
Fake it
Buy frozen French toast or you can try this quick step.
1 loaf of French bread pre-sliced
6 eggs
2 cups milk
1 cup heavy cream
1 Tbsp cinnamon
1 tsp vanilla
½ cup powdered sugar
Mix eggs, milk, cream, cinnamon, and vanilla in a large bowl. Warm skillet or hot plate with every one you’ll be using with a little cooking oil. This will give your toast a crispy edge. Dip bread into egg mix and place on skillet or hot plate and brown on one side and flip over and brown the other side. Place on plate and sprinkle with powder sugar.
Cinnamon Raisin French Toast use bread from your bread aisle.
Serve with warm maple syrup and butter or with your favorite fruit topping and whipped cream. This can be as a breakfast dish or a dessert.
GIZZARDS AND EGGS

1 lb gizzards
3 cups water
12 eggs
2 Tbsp butter
½ cup onions diced
Salt and pepper to taste
Bring gizzards to a boil in 2 quart pot with water on medium heat and reduce to medium low heat and simmer for 30 minutes or until tender. After the gizzards are done dice them into medium size pieces. Heat large skillet with butter and sauté onions until caramelized (start turning brown) then add eggs and scramble. When eggs are just about to your liking add gizzards and finish scramble. Season with salt and pepper.
Serve with sweet grits or sweet rice.
CREAMY GRITS
6 servings
Make it no Fake it
1 cup grits
2 Tbsp butter
2 cups milk
3 cups water
Pinch salt
Bring water, butter, salt and milk to a boil. Next add grits and stir. Reduce heat and simmer until grits start to thicken. Check to see if the grits are tender. If they are not just add a little more water and let simmer.
Cheesy Grits add 1 cup of cheddar cheese or parmesan cheese after cooking. It depends on what you’re pairing the grits with.
Garlic Grits add ¼ cup of caramelized garlic. Caramelize garlic in small skillet with 1 Tbsp of oil. When the garlic turns golden brown remove it from the heat. Fold into
