OVER MAIN CREDITS ROLL.
FOLK MUSIC, ala The 10,000 Maniacs, is the only sound heard.
A HAND opens the left side of two RED DOORS to enter into THE EASY, a two and a half star restaurant wanting to be a four star Italian bistro.
THE ENTRANCE AREA…
shows an older black couple, putting on their woolen gloves and winter jackets, before they make their way out into the cold winter afternoon.
The same HAND opens another set of RED DOORS to lead us into…
THE MAIN DINING AREA…
where JENNIFER the hostess, a skinny white teenager with braces, frantically gathers menus to seat impatient customers. She hurriedly gives a half-smile and a wave in our direction.
We turn right and then left, as we head towards the back of the building, the employees coat area.
Along the way, we see THE WAITSTAFF in their colorful Caribbean outfits, some shirts are baby blue, some are rosy red, some are sky blue, others are passionate purple: LAURA, an older waitress, chats with her customers… JIM, a nerdy waiter, rushes past us, says a quick Hi
, and heads to take an order… VERONIQUE, a fat-as-an-ox waitress, hurries past us carrying a tray of drinks.
We pass a pig pen type, slow moving bus-boy, BILL SCOTCH, hunched over from carrying a tub of filthy plates, cups, utensils, and half-eaten food.
We pass CUSTOMERS stuffing themselves on whatever is on the table. Usually this place is packed for lunch, but today it’s not as busy. Now we pass on the left side,

the main waitstaff area. The Main Hutch is separated from the dining area by a wall which has openings for the customers and waitstaff to view each other’s faces. However, the customers cannot see the counters or the sinks.
Not only is this area where the staff pick up the food and drinks for the customers, this is also designated as the complaint and bitch area on any number of subjects. Today is no different.
Another waiter, BOB FORTIER, a good looking Irish lad, carries an armful of burning plates in our direction. We see him mouth some obscenity.
