Mexican cooking includes both ends of the cooking spectrum, from purely uncomplicated to high complex flavors. The chilli pepper is ever-present in Mexican foods; Whether it is hot, earthy, smoky, fruit or sweet, the chilli pepper forms the foundation of every meal in the Mexican cuisine.     Common Ingredients & Staples

    The following are traditional Mexican ingredients, which are commonly used in many Mexican recipes.

    Starting with beans and corn, which turned out to be part of the very foundation on which the Mexican cuisine was built on for an era, and they are still a source of nutrition till today. Seafood is also a major source of protein for Mexican villages around coastal areas. Ingredients, such as: chicken, wheat, cheese, onions and garlic where imported into the Mexican cuisine by human migration.

    An extensive assortment of chiles are also used in the cuisine to offer hot spiciness, including: jalapeños, puyas, guajillos, pasillas, anchos, chipotles, poblanos, habaneros and serranos and much more!

    Tomatoes are built into the Mexican cuisine fabric, and they are mostly used for toppings, pico de gallo and salsa. Similarly, the long-established fat used in the Mexican cuisine is 'lard'. It used to cook refried beans, tamales, masa and more. These days, olive oil, avocado oil, sesame oil and other vegetable oils can be used on the cuisine. Recently, cheeses such as queso fresco, queso Blanco and panela were added to the Mexican dish and cuisine.

    Mexican Flavors and Spices

    These are common spices and flavors that you will find on the Mexican diet. These include:

    Mexican Cooking Modus

    Like every other new civilization, Mexican cuisine began cooking with the use of a lidded pot on an exposed fire. Likewise, one of the earliest methods of cooking was grilling. Gradually, the Mexican cuisine made its way to the more common cooking methods that are known today. Another common cooking method is frying foods on a flat surface, and more recently on a cast iron pan.

    The system of cooking meat known as barbacoa involves steaming meat, enfolded in banana or cactus leaves in a deep pit or over hot-boiling water. Tortilla press are essential to make good corn or flour tortillas. For an enhanced Mexican flavor, the dry roasting method is employed in the preparation of several vegetables, including garlic cloves, onions, tomatillos, chiles and tomatoes before being served as a side dish or before adding them to other Mexican recipes.

    The small molcajete or the stone Piedra de molar was used to grind and crush Mexican ingredients. 

    Preparation and Shopping

    Mexican ingredients are available at your regular store and supermarket. But then again, buying your groceries at a Mexican designated grocery store will give you access to up-to-the-minute spices and ingredients. You will find rare spices, a variety of chiles and an assortment of produce that you can use to put together a tasty Mexican dish.

    BREAKFAST

    Homemade Egg Chilaquiles with Parsley

    Preparation Time: 15 minutes

    Cook Time: 10 minutes

    Serves: 4 servings

    Ingredients (chilaquiles)

    4 eggs, large

    2 tbsps avocado oil

    2 cups tortilla chips

    1 1/2 cups canned enchilada sauce

    2 tbsps fresh chopped parsley

    1/4 cup red onion, diced

    Crumbled queso fresco cheese

    2-3 (sliced thin) radishes

    1 (cut into wedges) lemon

    1 (halved, pitted and sliced) avocado

    Method

    1. Add avocado oil into a nonstick skillet over med-low heat. Break the eggs into the heated skillet, stir to combine and cook until egg-whites are just set. Scoop avocado oil over egg whites until well cooked. Take skillet off heat and let sit.

    2. Place a 10" cast iron skillet over med-high heat. Add enchilada sauce into the cast iron skillet, add in the tortilla chips and toss until wholly coated. Cook until tenderized, for 1-2 minutes. Take skillet off heat.

    3. Add the eggs, queso fresco cheese, lemon, avocado, radishes and red onion. Sprinkle with salt. Scoop into serving bowls and dig in.

    Tasty Huevos Rancheros

    Preparation Time: 25 minutes

    Cook Time: 20 minutes

    Serves: 4 servings

    Ingredients (pico de gallo)

    ¼ cup white onion, chopped finely

    2 (chopped) medium ripe tomatoes

    2 tbsps lemon juice

    ¼ cup fresh chopped parsley

    ¼ tsp sea salt

    Beans

    ¼ cup white onion, chopped finely

    2 tsps avocado oil

    1 tsp cumin, ground

    ¼ tsp sea salt

    ¼ cup water

    1 (15 oz.) can (rinsed and drained) black beans

    ½ tsp lemon juice

    Freshly ground black pepper

    Other Ingredients

    4 tsps (divided) avocado oil

    1 ½ cups homemade/store-bought red salsa

    4 corn tortillas

    4 eggs

    Freshly ground black pepper

    Garnish with (if desired)

    Hot Sauce

    Fresh chopped parsley

    Avocado slices

    Feta cheese, crumbled

    Method

    1. Add the pico de gallo ingredients into a bowl: Add salt, lemon juice, parsley, onion, and tomatoes into an average bowl,
