Introduction
With all the fast food imitations, people outside of Mexico may not even remember what real traditional Mexican food is! But Mexico has a rich culinary tradition - much of it coming out of hundreds or even thousands of years of history. Many recipes have roots in the ancient Aztec culture, connecting this long ago civilization to modern day Mexican cooking.
One of the Aztec dishes lasted all the way up until modern times. That dish is called guacamole. You would be hard pressed to find someone who didn’t know what it is. It was created by the Aztecs long ago and is used today as a side salad, dip or condiment. Many people enjoy eating guacamole with tomatoes and tortilla chips. It’s made by mashing together sea salt and ripe avocados with additional seasonings according to taste.
There are European influences in modern day Mexican cooking that have been added over time. These include items such as pork and beef, garlic and onions, rice and cheese. Meat is one of the main additions that Europeans brought to the table. Spanish, American and European elements were eventually added through the last three centuries. Today, cooking techniques have been mixed but you can always sense the spice of Mexican cooking when a dish is prepared for you, simply by noting the additions of beans and chili peppers.
One of the staples of a Mexican diet is the tortilla. These can be prepared using flour or corn. The difference in taste is significant. You won’t fool your family by switching so it’s best to find out which one you prefer before choosing when creating a Mexican dinner.
