    ermentation is one of the oldest forms of food preservation that has been around for thousands of years. Our ancestors discovered that fermentation not only preserves food but also improves flavor and enhances digestibility and nutrients absorption.  

    After decades of obscurity, fermented foods have suddenly become the darling of all the health food magazines and health websites. A growing number of people discover that fermented foods are extremely helpful in healing a variety of diseases such as leaky gut syndrome, allergies, hormonal imbalances, skin problems, problems with weight management, and many more.

    Fermented foods became a part of different cultures. Poland and Russia have fermented cucumbers, cabbage, green tomatoes, and peppers. Koreans have Kimchi, a form of lacto-fermented cabbage with seasonings and a variety of vegetables. Japanese and Chinese enjoy fermented or pickled cabbage, eggplant, squash, carrot, turnip, cucumber, and onion. India has chutneys and fermented fruits with spices. Americans have corn relish, watermelon rind, and cucumber relish. Europeans love lacto-fermented dairy, herbs, sauerkraut, and root vegetables. Central Africa has porridges from soured grains. The Alaskan Inuit ferment sea mammals and fish. Latin America has Cortido.

    One of the crucial functions of the fermentation process is the production of beneficial flora in our gut aka probiotics. A strong gut flora is fundamental for healthy immune system, weight management, detoxification process and proper nutrients absorption. By eating processed foods (full of sugar, toxic food additives and hydrogenated fats), overusing antibiotics and experiencing chronic stress, the good bacteria in our gut, that protect us from diseases, gets destroyed.     What Exactly Is Fermentation?

    Fermentation refers to the chemical breakdown of a substance by using yeasts, fungi, bacteria, or other types of microorganisms. During the process, microorganisms induce the release of bio-preservatives like lactic acid, alcohol, and acetic acid.

    Pickling is not always the same as fermenting. Pickling is more like an umbrella term that refers to the methods of preserving food in an acidic medium such as vinegar. Fermentation is a type of pickling method but the acidic medium in this process is produced through the process itself. In fermentation, the food is not submerged in acid outright. The acid is produced only when the starches and sugars in food get converted to lactic acid
