    PART 1: MASON JAR MEALS

    A Mason jar is a glass jar used for canning and preserving food. Used for generations, these jars have now become more popular largely because of the huge difference they make in the life of an increasing high number of working mothers and those who cannot spare the time to cook and enjoy hearty dishes.

    With mason jars, you can store pre-made food for days, weeks and even months. No longer will there be any need to visit fast food restaurants to eat deep fried, processed and unhealthily preserved meals which endanger your health. We all need to stock our home with mason jars, prepare healthy meals in them during our free- time, pack and refrigerate them till we are ready to eat and we are good to go.

    BREAKFAST IN A MASON JAR

    Chia Seed Muesli

    Ingredients

    1 (6oz.) Greek yoghurt

    2 tsp Chia seeds

    ½ cup unsweetened almond milk

    1/3 Rolled Oats, (not steel) instant or cut

    2 tbsp nuts

    ¼ Vanilla Extract

    2 tbsp dried fruit or ¼ cup dried fresh fruit 

    Instructions

    1. Place all ingredients in a pint size mason jar.

    2. Seal tightly and shake thoroughly.

    3. Refrigerate overnight.

    4. Eat chilled the following morning.

    Mason Jar Bacon & Eggs

    Ingredients

    Fresh spinach

    Shredded cheese

    2 eggs

    Bacon

    Pinch salt and pepper

    Instructions

    1. Mix together eggs, cheese, spinach, salt and pepper in a bowl.

    2. Pour the mixture into a mason jar.

    3. Cook in the microwave for 1to 2 minutes.

    4. During cooking, the egg mixture will puff up but will deflate once removed from the microwave.

    5. Top with some extra cheese and bacon crumbles.

    Maple Cinnamon Crunchy Oats

    Ingredients

    In this order from the bottom up:

    ½ cup vanilla Greek yogurt

    ½ cup old fashioned oats

    1 tbsp chia seeds

    3 tbsp sliced fresh strawberries and pecan halves

    1 tbsp pure maple syrup

    ½ tsp cinnamon

    Instructions

    1. In a 500 ml mason jar, layer all ingredients. Let it sit overnight.

    2. Top with a dollop of Greek yogurt or fresh strawberries and drizzle with maple syrup and 1 whole pecan.

    Granola Parfait

    Ingredients

    3 cups regular rolled oats

    1 cup coconut, shredded

    1 cup of following mixture: sesame seeds, shelled sunflower seeds, or chopped pecans, peanuts, filberts or cashews

    3/4 cup of regular wheat germ

    3/4 cup almonds, chopped or sliced

    2/3 cup brown sugar, packed firmly

    1/2 cup instant nonfat dry milk

    1/3 cup of honey

    1/4 cup of vegetable oil

    1 1/2 cups any one or mix of the following: raisins, chopped dates, currants, chopped dried peaches, or chopped dried apricots

    Instructions

    1. Preheat oven to 325 degrees Fahrenheit. Grease a large baking pan with solid shortening and then set aside.

    2. Mix the first 7 ingredients together in a bowl.

    3. Combine oil and honey in a small saucepan, heating gently to dissolve the honey.

    4. Pour the honey mixture in the dry ingredients, mixing well to coat. Spread the mixture over the baking pan evenly and bake for about 20 minutes or until desired toast.

    5. While baking, stir every 5 minutes with a spatula. As it cools, add the dried fruit.

    6.  Let it cool and store in quart sized mason jars at room temperature. Tie the mason jars with raffia bows!

    Fruity-Nut Oatmeal Mix

    Serves: 15

    Yields: 7 ½ cups mix

    Ingredients

    1 container (18 oz.) quick-cooking oats

    1 package (7 oz.) dried fruit, coarsely chopped

    1/2 cup chopped pecans or walnuts

    1/2 cup granulated sugar or firmly packed brown sugar

    1 jar (3 oz.) non-dairy powdered creamer

    1 teaspoon salt

    Instructions

    1. Place the dried fruit in a processor and process until thinly chopped.

    2. Add the remaining ingredients and process until it is blended well.

    3. Store in airtight jar.

    4. Attach these instructions to jar:

    Stir 2/3 cup of boiling water into 1/2 cup of oatmeal mix, blending well.

    Let it stand until thickened.

    Buttermilk Pancake Mix

    Yield: 10 four-inch pancakes.

    Ingredients

    8 cups all-purpose flour

    2 cups buttermilk powder

    1/2 cup granulated sugar

    4 tsp. baking soda

    8 tsp baking powder

    2 tsp. salt

    Instructions

    1. Sift ingredients together. Store it in a jar with a tight-fitting lid.

    2. Use within 6 months.

    3. Attach these instructions to jar:

    Buttermilk Pancakes:

    1 1/2 cups
