Cat’s Fizzy Kombucha Magic + Blends

When did you discover kombucha?

I discovered kombucha about eight or nine years ago, when I was visiting a friend who lived in a tiny, off-grid, hand-built stone house on a windy mountain. I had no idea what that vinegar-y, strange-looking pancake was, and he simply handed me one of his scobys inside a jar with some tea and told me to keep it alive. I didn’t do any research and followed his simple advice (black tea and sugar, and off you go). I’m glad I didn’t look too much into it back then, to be honest, or I would have probably felt too overwhelmed to even start!

What are the challenges, if any, with making kombucha?

Keeping kombucha has been such a smooth journey, and the only two times I accidentally killed my scoby became learning processes. Maybe the only challenge, personally, is that our house temperature varies a lot during the year, and we don’t have a fridge. So when I’ve just
