My Favorite Polish Recipes and Comfort Foods

Introduction

Growing up in a Polish American home was a wonderful experience. Dad worked in the steel mill and mom was there to take care of us, and part of taking care of us was home cooked meals. Until I got older I never realized how even growing up in a lower middle class home and neighborhood, how good we had it. Several times a week we would bake bread and our flat would fill with wondrous fragrance. Several times a year we would get out the meat grinder, grind up twenty pounds of pork butt and stuff sausage casings. Once a month or so we would have golubki and I always looked forward to these delightful rolls of meat and cabbage. We ate well. Although not my mother’s recipes, the recipes contained herein are my reworked efforts to re-create the love and comfort of my childhood. Although we didn’t have the term comfort food back then, these meals did bring us comfort and contentment, And, as I grew older and experienced more foods, more dishes were added to my repertoire of recipes that would become my comfort foods. It’s with those feelings of love and contentment that I offer these recipes to you for your enjoyment. I trust you will come to love them as much as I do.
